Fall is arguably the most diverse season on the Michigan wild-foods calendar, bringing together some of the most sought-after and hardest-to-source ingredients of the entire year — several of which are only available during this window.

What defines fall sourcing

Hen of the woods and black trumpets both fruit through the fall months, and it's also when chaga harvest typically begins as the weather turns colder. Michigan truffle, the rarest item on the calendar, is generally foraged in fall and into early winter, in smaller quantities than anything else a supplier brings in.

Building an autumn menu around wild ingredients

Fall's cooler-weather, richer cooking style — braises, stocks, roasted dishes — pairs naturally with the deeper, earthier flavor profiles of fall wild mushrooms, making this one of the more intuitive seasons to build a menu feature around without needing to force the pairing.
